Roasted Spiced Chickpeas

Chickpeas are high in protein and a great source of fibre as well being gluten-free so they make a great nutritious snack. But munching on a handful of plain old chickpeas ain't that tasty really. This is why I went out searching for a recipe to glam up the old chickpea to turn it into a tasty, easy and super cheap snack to have in the pantry.

We make this recipe a lot and they are super delicious added to salads or just on their own. My kids also love them which is a win as they are getting more fibre and protein into their diet - filling them up for longer... (well that's the idea!).

Roasted Spiced Chickpeas

2 cups dried chickpeas
4 Tbsp virgin coconut oil or extra virgin olive oil
2 tsp cumin
2 tsp paprika
2 tsp sumac
Salt/pepper

Directions
Soak your chickpeas in water overnight. Drain your chickpeas and then to cook, cover with water in a pot and cook for 1-2 hours. Once cooked and semi soft drain them and rinse in cold water. Make sure your chickpeas are nice and dry and chuck them on a big roasting dish. Melt the coconut oil (if using) and put evenly onto chickpeas. Sprinkle over all of the spices and a few grinds of salt and pepper. Toss to make sure all of the oil and spices have coated the chickpeas evenly.

Pop into the oven and roast until nice and golden brown - probably around 20-30 mins. Remove from the oven then leave to cool.
Store in an airtight jar or container in your pantry and enjoy!
