Sumac is a dark red, rusty spice which is widely used in Middle Eastern and North African cooking, where it is much esteemed for its sourness and astringency.
It is a popular spice to use to add flavour to meats and salads. Sumac is a favourite spice of ours - we love adding it to our hummus or spicing homemade potato chips with it. A little goes a long way with Sumac because of its interesting, intense taste.
