Green Puy lentils are a great addition to add to your kitchen pantry essentials. Lentils are often overlooked, even though they’re an inexpensive way of getting a wide variety of nutrients and they are rich flavour and nourishing. Legumes are highly appreciated for their nutritional properties, a rich source of plant based fibre, protein, essential minerals, amino acids, and B-complex vitamins.
French green lentils are a grayish-green in color with a creamy yellow interior; these green puy style lentils are sourced from Canada, and provide a robust, earthy flavour. Delicious and satisfying, adding a great texture in soups, stews, salads or side dishes. Lentils are also an excellent substitute for meat, making these lentils a great protein source for vegetarians and vegans.
When cooking rinse the lentils and then use three cups of liquid for each cup of lentils. Lentils placed in already boiling water will be easier to digest than those that were brought to a boil with the water. The most reliable way to cook perfectly tender lentils is to bring them to a rapid simmer, and then turn down the heat to simmer and cover and boil for 20 minutes. You want to see just a few bubbles in the water and some gentle movement in the lentils. They will plump up nicely without splitting their skins or becoming mushy.
These cooking times can be slightly adjusted depending upon the final use. If you are going to be serving lentils in a salad or soup and desire a firmer texture, remove them from the stove top when they have achieved this consistency--typically 5-10 minutes earlier than their usual cooking time. If you are making dal or some preparation that requires a mushier consistency, achieving this texture may take an additional 10-15 minutes.
