Tapioca is a starch that comes from the root of a cassava. It is gluten and wheat free making it a great replacement for wheat based ingredients. It may contain resistance starch which helps with digestion and blood sugar levels after eating. 

Because of it's low protein content, it is good for cooking soft foods such as cakes, breads or biscuits or use it is as a gluten and grain free thickener.
