Peanut Butter Coconut Clusters

These little peanut buttery coconuty clusters are the perfect treat for all peanut butter lovers! They are a delicious combination of just the right amount of peanut butter and coconut mixed together into a protein filled delicious morsel.

We normally make up a batch of these and freeze them then leave them either in the fridge or the freezer for a quick protein filled non chocolatey treat. We tend to keep them in the freezer as they are a little more hidden and last a little longer than a couple of days with my boys.

Recipe
3/4 cup of Fix & Fogg Super Crunchy or Smooth Peanut Butter
1/2 cup of shredded coconut
1/4 cup of melted coconut oil
1 Tbsp of brown rice malt syrup

Method
Mix everything in a bowl and then if you have little ice cube moulds then pop them into these or you can just put little dollops of mixture (be careful as they do spread) on a tray then freeze on the tray. Freeze for around 4-6 hours and then once hard either keep in the fridge or the freezer. Enjoy! And good-luck making them last longer than a couple of days :)
