Easy Banana Blender Muffins
These quick Banana Blender muffins have become a regular weekly staple for our household and our children absolutely love them. They are the absolute easiest, quickest and tastiest muffins, which are dairy free and super easy to make gluten free too. Perfect for lunchboxes, after school treats or work morning teas.
You just have to pop everything in the blender, blend and bake and you are done so they are an easy option to make before work in the morning or week night evenings.
Ingredients:
1 3/4c Wholewheat Flour (or sub for your fave GF alternative)
2 tsp Baking Powder
1 tsp Cinnamon
Pinch of Sea Salt
3/4c Dates
3 eggs
2 Bananas
1/4c Melted Coconut Oil or Butter
Optional Additions:
1/4c Dark Choc Chips
1/4c Walnuts
Directions:
Pop all ingredients into a large blender and blend. Pop in pre-greased muffin trays in bake at 180 until golden and cooked. We store these in a airtight container in the pantry and they are good for at least 3-4 days.
Substitute the 3 eggs with 3 tablespoons of ground flaxseed soaked in half a cup of water and you’ve got a great vegan recipe!
