Almond & Cacao Chocolate (df, refined sugar free)

This is our easy recipe for a package free, refined sugar free, dairy free chocolate. It is great to make up a batch of it and then store cut up into wee pieces in the freezer for when you want a bit of a healthier chocolate treat. It takes under 10 minutes to make and then you can set it in the freezer which means its ready to enjoy even quicker. 

Ingredients 
3/4 cup melted virgin coconut oil
1/4 cup cacao powder
2 Tbsp peanut butter
2 Tbsp rice malt syrup, honey or maple syrup
1/2 cup chopped almonds

Directions
1. Melt your coconut oil in a pan on a low heat, stir in cacao powder, peanut butter, rice malt syrup then add in almonds once off the heat.

2. Mix well then pour into a shallow tin. Pop into the freezer to leave to set for around 10 minutes and then once just starting to freeze I find it is easier to cut into little squares then before it sets properly.

3. Once you have cut it pop it back into the freezer to set properly for around 30 minutes or you could pop it into the fridge overnight.

Keep the squares in the fridge or freezer for whenever you feel like a little chocolate treat without any waste to dispose of.

You can change up the flavours with this to anything you have on hand. Some ideas that we have used before that work great are adding mixed seeds, cashews, chopped apricots or figs for a fruity twist or adding a little orange zest and a couple of tablespoons of fresh orange juice.
