This whole wheat is grown locally in Hawea Flat. Once milled, it is perfect to use to make your own high quality, nutritious, wholegrain wheat flour. Wholegrain wheat is the main type of wheat made to use flours and it contains a high amount of carbohydrates. Once processed and refined a lot of the nutrients are lost from the wholegrain - especially across very processed flours which are available mainstream. Milling your own ensures that the nutrients and vitamins are retained as much as possible and it is a lot fresher.
Wholegrain Wheat is a good source of iron, manganese, phosphorus, magnesium, potassium, and zinc. From vitamins it provides B6, folate, thiamin, riboflavin and niacin.
If you are milling/grinding your own flour and switching from refined flour to wholegrain wheat, increase your cooking times. Bread will be denser and more chewy, also darker in colour. It is easy to substitute whole wheat in biscuit, cracker and pastry recipes.
Another awesome way to use whole wheat is to make 'Bible Bread'. This is a unleavened flat-bread. It is a great replacement to regular bread and typically a lot healthier without the plastic.
